Trout—both brown and rainbow trout—can be caught in many open waters throughout the Black Forest. However, the majority of trout sold commercially come from fish farms. Thanks to the Black Forest’s excellent water quality—a crucial factor in trout farming—this does not compromise the quality of the fish.

Trout can be prepared in a wide variety of ways. Popular—and delicious—options include smoked trout fillets, *Forelle blau* (poached whole trout), and *Forelle Müllerin Art* (trout meunière).
